
CUCUMBER ROLL WITH SALMON AND CREAM CHEESE

1 Roast the peppers in the oven at 200°C for 25-30 minutes, then peel and chop them.
2 Rinse (and peel, if desired) the peppers.
3 In a food processor, combine peppers, chickpeas, tahini, garlic, lemon juice, oil, paprika, salt, and pepper; blend to a smooth cream.
4 Add water or extra oil if needed to reach desired consistency.
5 Garnish with oil, paprika and parsley.
6 Serve with crostini or fresh veggies – your roasted pepper hummus is ready!
